One ingredient four ways — Canned pumpkin
Pumpkin spice muffins
Mix together 18-ounce spice cake mix and 1 15-ounce can solid pumpkin. Fill muffin cups two-thirds full. Bake at 350 degrees for 18 to 22 minutes or until knife comes out clean. Makes 18.
Pumpkin pie smoothie
Add 1/4 cup solid pumpkin, 1/2 cup plus 2 Tbsp non-fat or light soy milk, 1 tsp Truvia, 1/2 tsp pumpkin pie spice to blender. Pulse until blended. Add 1 1/2 cups ice cubes and blend until smooth.
Quick and easy
Pumpkin Fluff dip
In large bowl, mix 1 5-oz. package instant vanilla pudding mix, 1 15-oz. can solid pumpkin and 1 tsp pumpkin pie spice. Fold in 1 16-oz. container Cool Whip, thawed. Serve with graham crackers.
Pumpkin chocolate chips
In a bowl, mix 1 roll chocolate chip cookie dough, 1/2 cup solid pumpkin and 1 tsp pumpkin pie spice. Shape into 1 1/4-inch balls. Bake on ungreased cookie sheets at 350 degrees 14 to 16 minutes.
