Next Stage hosts cooking classes

PUTNEY — Next Stage Arts Project will continue its cooking class series with three upcoming events, on Mondays, Jan. 29, Feb. 12 and March 19, each from 6 to 9 p.m., at Next Stage, taught by Chef Linda Stavely. The cost is $65; registration is limited with tickets available at On Jan. 29, learn about the soups and stews of Spain and Portugal, including Portuguese stone soup, Portugese green soup, Portugese fish chowder, Spanish spicy garlic soup, Spanish clam, shrimp, and rice soup and Spanish bean, potato and meat stew. Feb. 12 features a chocolate celebration in time for Valentine's Day, including how to melt chocolate, learn the different types of chocolate and when to use each. Items include chocolate fallen souffle cake, chocolate espresso pots de cream, salted caramels dipped in dark chocolate, chocolate cups, hot fudge sauce, fruit dipped in different chocolates and chocolate coated bacon, pretzels, crackers. Vietnamese cooking will be on the menu on March 19, with items such as fresh spring rolls, Vietnamese chicken soup, fried rice with crab and vegetables, stir-fried pork balls with vegetables and noodles and bananas with coconut milk custard.

The class will dine together and wine will be included. The classes are held at Next Stage's recently renovated state-of-the art commercial kitchen, 15 Kimball Hill. Stavely has traveled and studied in France, Italy, Mexico, the Middle East and the Caribbean, as well as studying at the Vermont Culinary Center. She has worked with Julia Child when she visited Dublin in the 90s. She is currently writing her first book on her food, travel and catering adventures. Stavely helped start the Common Ground restaurant in Brattleboro, started and ran The Portable Feast at the Colony Mill Marketplace in Keene, N.H., and has been teaching cooking classes in the Keene area for many years.
